BTB Isn't Just a Restaurant
All food prep for Telva runs through the BTB kitchen — BTB doubles as a commissary for Telva and catering. So BTB's 3,572 BOH hours/mo (Jun) reflect three demand streams, not one, and aren't directly comparable to Telva's kitchen, which only cooks for itself.
BTB FOH Hours More Than Doubled
BTB FOH hours went 1,197 → 2,418/mo (+102%) Jan to Jun, the steepest climb of any role/venue — and FOH is dining-room-only, so this growth is genuinely BTB-restaurant demand, not commissary spillover.

Important: all food prep for Telva is done at the BTB kitchen, which also serves as the commissary for catering — so BTB's BOH/Dishwasher hours and headcount reflect production for BTB, Telva, and catering combined, not BTB's dining room alone. Telva's location figures are closer to a pure single-venue read since it has no kitchen production of its own. Keep this in mind when comparing "hours per venue" as a proxy for each restaurant's individual footprint.
